Raspberry-Elderflower Royale
Ingredients
(for 1 glass):
- 1 teaspoon Callas Intense Raspberry Jam
- 15 ml elderflower syrup
- 15 ml fresh lemon juice
- 80 ml cold Darjeeling tea or a delicate white tea (light and aromatic)
- 40 ml sparkling water or a refined premium tonic
- Ice cubes
- Optional: fresh raspberries and a mint leaf for garnish
Preparation
- Dissolve the raspberry jam in the lemon juice and elderflower syrup. Stir well until smooth.
- Add the cold tea and stir again.
- Strain the mixture if desired to remove seeds (for a clean, clear presentation).
- Fill a coupe or tumbler glass with ice and pour the mixture over it.
- Top with a splash of sparkling water for a light fizz.
- Garnish subtly — for example, with a raspberry on a golden skewer or a fresh mint leaf.
